Pink Mamma, c'est une grande trattoria conviviale sur 4 étages où nous grillons des steaks T-Bone de 1kg et des steaks Tomahawk de 1,3kg sur notre barbecue de 3 mètres de long (la taille importe). Nous élevons et nourrissons nous-mêmes nos propres vaches afin d'obtenir cette viande de maïs extraordinairement tendre, mûrie au moins 30 jours. La viande est cuite par un mélange de cerise et de quebracho pour lui donner un goût incomparable, mais la recette est pure tradition toscane. En passant, dans cette région, il est dit que si un steak est plus mince que trois doigts, on l'appelle un carpaccio. On dit aussi que c'est un péché de commander une Bistecca alla fiorentina sans un verre de Chianti Riserva. En terme de vin, nous avons quelques découvertes incroyables, comme certains vieux millésimes, issus des anciennes caves des hôtels toscans. Ils sont incroyables avec la viande et s'intègrent parfaitement dans l'atmosphère du plafond de verre du dernier étage. Nous vous proposons également un menu estival super frais pour ne pas manquer la dorade Superstar, le tartare de truffes du Molise ou l'orgasmique Gianduja et flor di latte. Et si vous avez le courage d'aller au sous-sol, n'hésitez pas à pousser les portes interdites, vous pourriez être surpris ...

Pink Mamma, it’s big and friendly trattoria on 4 floors where we grill 1kg T-Bone steaks and 1,3kg Tomahawk steaks on our 3 meters long barbecue (size does matter). We breed and feed our own cows ourselves in order to get this corn-fed meat extraordinarily tender, matured at least 30 days. The meat is cooked by a mix of cherry wood and quebracho to give it an incomparable taste, but the recipe is pure Tuscan tradition. By the way, in this region, it is said that if a steak is thinner than three fingers, it’s called a carpaccio.  It’s also said that it is a sin to order a Bistecca alla fiorentinawithout a glass of Chianti Riserva. In term of wine, we have a few incredible discoveries, like some old vintages right from old Tuscan hotels’ cellars. They are amazing with the meat and fit perfectly with the atmosphere of the last floor glass-ceiling. We also propose a super fresh summer menu so do not skip the Superstar sea bream, the Molise’s truffles tartare or the orgasmic Gianduja and flor di latte ice-cream sundea. And if you have the guts to go in the basement, do not hesitate to push the forbidden doors, you might be surprised…
